With these tough economic times and the rising cost of food, Carol decided to share her knowledge with others. In 2009, she founded Budget Meals, a non-profit organization designed to teach that system to others and help struggling families provide great food at low-cost. So in 2011, Carol published her book “Beyond Couponing” to help anyone looking to stretch their food dollar and get rid of the stress of preparing meals.
